Tasty Turkey Pot Pie

Ingredients
  • 2 tsp. butter
  • 1 small onion, finely chopped
  • 1/4 cup flour
  • 1 cup milk
  • 1 cup chicken broth
  • 2 cups shredded or cut up cooked / left over turkey
  • 1 bag (10 oz.) mixed vegetables
  • 3/4 tsp. salt
  • 1/8 tsp. ground black pepper
  • 1/2 tsp. dried thyme leaves (optional)
  • 1 refrigerated pie crust
 

Instructions
  1. Preheat oven to 400°F.
  2. Melt butter over medium heat in medium saucepan and cook onion, stirring occasionally until softened.
  3. Add flour and cook, stirring until golden brown.
  4. Stir in milk and whisk until starting to thicken.
  5. Add turkey, mixed vegetables, salt, black pepper and thyme.
  6. Pour into 1-1/2-quart round casserole dish and cover with pie crust; pressing edges to secure.
  7. With a knife cut several small slits into crust.
  8. Bake 25 minutes or until crust is golden brown and filling is bubbling.
