Tasty Turkey Pot Pie
Ingredients
- 2 tsp. butter
- 1 small onion, finely chopped
- 1/4 cup flour
- 1 cup milk
- 1 cup chicken broth
- 2 cups shredded or cut up cooked / left over turkey
- 1 bag (10 oz.) mixed vegetables
- 3/4 tsp. salt
- 1/8 tsp. ground black pepper
- 1/2 tsp. dried thyme leaves (optional)
- 1 refrigerated pie crust
Instructions
- Preheat oven to 400°F.
- Melt butter over medium heat in medium saucepan and cook onion, stirring occasionally until softened.
- Add flour and cook, stirring until golden brown.
- Stir in milk and whisk until starting to thicken.
- Add turkey, mixed vegetables, salt, black pepper and thyme.
- Pour into 1-1/2-quart round casserole dish and cover with pie crust; pressing edges to secure.
- With a knife cut several small slits into crust.
- Bake 25 minutes or until crust is golden brown and filling is bubbling.
