Rosemary & Sage Pork Tenderloin

Ingredients
  • 2 lb. boneless pork loin
  • 1 1/2 tsps. chopped sage plus 2 sprigs
  • 1 1/2 tsps. chopped rosemary plus 2 sprigs
  • 1 tsp. minced garlic plus 2 cloves
  • 3 tbsp. extra virgin olive oil
  • salt and black pepper

Instructions
  1. Preheat the oven to 375°F.
  2. Cut a channel lengthwise through loin.
  3. Mix the sage and rosemary in a bowl.
  4. Add minced garlic and 1 tbsp. oil.
  5. Season with salt and pepper, then poke it through the channel in the meat.
  6. Season outside of loin with salt and pepper.
  7. Heat oil over medium-high heat in an oven-proof skillet.
  8. Brown meat entirely for about 8 minutes.
  9. Add herb sprigs and crushed garlic to the pan and put in the oven.
  10. Roast for 15 minutes, turn and roast 15 minutes more until the temperature of loin is 150°F.
  11. Remove pan from oven, cover with foil and let rest for 15 min, then slice and serve.
