Rosemary & Sage Pork Tenderloin
Ingredients
- 2 lb. boneless pork loin
- 1 1/2 tsps. chopped sage plus 2 sprigs
- 1 1/2 tsps. chopped rosemary plus 2 sprigs
- 1 tsp. minced garlic plus 2 cloves
- 3 tbsp. extra virgin olive oil
- salt and black pepper
Instructions
- Preheat the oven to 375°F.
- Cut a channel lengthwise through loin.
- Mix the sage and rosemary in a bowl.
- Add minced garlic and 1 tbsp. oil.
- Season with salt and pepper, then poke it through the channel in the meat.
- Season outside of loin with salt and pepper.
- Heat oil over medium-high heat in an oven-proof skillet.
- Brown meat entirely for about 8 minutes.
- Add herb sprigs and crushed garlic to the pan and put in the oven.
- Roast for 15 minutes, turn and roast 15 minutes more until the temperature of loin is 150°F.
- Remove pan from oven, cover with foil and let rest for 15 min, then slice and serve.
