Mediterranean Barley Salad with Garbanzo Beans

Ingredients
  • 1 cup Barley, cooked according to package directions
  • 1-pint plum tomatoes, halved
  • 1 English cumber, cut into half moons
  • 1 can garbanzo beans, drained and rinsed
  • 1 orange bell pepper, seeded and chopped
  • 1/2 cup minced red onion,
  • 1/2 cup kalamata olives, pitted
  • 1/4 cup olive oil
  • 1/2 cup fresh lemon juice
  • Salt and pepper to taste
  • Handful Fresh Basil, rinsed

Instructions
  1. Combine all ingredients from barley to olives in a large bowl.
  2. In a glass jar combine olive oil and lemon juice, shake to combine well and pour over barley salad ingredients. Season with salt and pepper to taste.
  3. Top with fresh basil, serve chilled.
