Mediterranean Barley Salad with Garbanzo Beans
Ingredients
- 1 cup Barley, cooked according to package directions
- 1-pint plum tomatoes, halved
- 1 English cumber, cut into half moons
- 1 can garbanzo beans, drained and rinsed
- 1 orange bell pepper, seeded and chopped
- 1/2 cup minced red onion,
- 1/2 cup kalamata olives, pitted
- 1/4 cup olive oil
- 1/2 cup fresh lemon juice
- Salt and pepper to taste
- Handful Fresh Basil, rinsed
Instructions
- Combine all ingredients from barley to olives in a large bowl.
- In a glass jar combine olive oil and lemon juice, shake to combine well and pour over barley salad ingredients. Season with salt and pepper to taste.
- Top with fresh basil, serve chilled.
