Ham & Egg Casserole

Ingredients
Prepare this casserole on Sunday night and you’ll have a breakfast for champions all week long!
  • 12 Eggs
  • 1 carton (15oz) ricotta or cottage cheese
  • 1/2 cup all-purpose flour
  • 1 tsp. baking powder
  • 2 cups (8 oz) shredded Italian cheese blend
  • 2 cups (8 oz) chopped cooked ham
  • 1/2 cup minced green onions

Instructions
  1. Heat oven to 350 degrees F. Beat eggs in a large bowl until blended.
  2. Add ricotta cheese, flour and baking powder; mix well. Stir in Italian cheese, ham and green onions. Pour in greased 13x9-inch glass baking dish.
  3. Bake until puffed, golden and knife inserted near center comes out clean, 40 to 50 minutes. Let stand 5 minutes.
Tip: If making ahead, refrigerate once cooled. To reheat, place in microwave and cover with a paper towel for one to two minutes. Nutrition Information: Calories: 225;
