Grilled Mahi Mahi with Fresh Tomato Salsa

Ingredients
  • 1 ¼ pounds mahi-mahi, skin removed, cut into 4 portions
  • 2 tablespoons lime juice, divided
  • 1 tablespoon extra-virgin olive oil
  • 1 medium ripe tomato
  • 2 tablespoons chopped fresh cilantro or parsley
  • 2 tablespoons chopped red onion
  • 1 small jalapeño pepper, seeded and minced
  • 1 clove garlic, minced
  • Salt and pepper to taste.

Instructions
  1. Place Mahi in a shallow dish, sprinkle with 1 tablespoons lime juice and oil. Turn to coat well. Cover with plastic wrap and refrigerate for 30 minutes.
  2. Preheat grill to medium-high heat.
  3. Core the tomato and halve crosswise. Gently squeeze out and discard the seeds. Dice the flesh and place in a small bowl. Stir in the remaining one tablespoon lime juice, cilantro, onion, jalapeno, garlic, salt and pepper.
  4. Oil the grill rack. Grill the Mahi until it is opaque in the center, 5 to 6 minutes per side. Serve with tomato salsa.
