Asparagus with Cream Sauce

Ingredients
  • 1 pound fresh asparagus, trimmed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1/2 cup Cottage Cheese
  • 2 tablespoons Light Sour Cream
  • 3 tablespoons skim milk
  • 1/3 cup fresh lemon juice
  • 1 tablespoon fresh lemon zest

Instructions
  1. Place the asparagus on a grill pan.
  2. Sprinkle with the salt and pepper.
  3. Drizzle with the olive oil.
  4. Grill the asparagus for 10 minutes just until tender-crisp. Meanwhile combine the cottage cheese, sour cream and milk in a blender or food processor; process until smooth.
  5. Add the lemon juice and lemon zest to the cottage cheese sauce; blend to incorporate.
  6. Spoon the sauce over the grilled asparagus and serve.
