Lemon Split Chicken Breast

Ingredients
  • 2 Split Chicken Breast
  • Salt and Ground Pepper to Taste
  • 1 tbsp. Canola Oil
  • 2 tbsp Butter
  • Handful Fresh Thyme Sprigs
  • Half a lemon, for Serving

Instructions
  1. Preheat oven to 400 degrees
  2. Pat chicken dry and season with salt and pepper
  3. Heat oil in an oven safeskillet over  medium high heat
  4. Place chicken into hot skillet skin side down
  5. Cook without moving until it's deep golden brown and crisp, about 6 minutes
  6. Carefully flip chicken over then add butter and thyme
  7. When butter is melted, spoon over chicken several times
  8. Transfer skillet to overn and cook chicken for 20 to 30 minutes
  9. Baste with thyme butter over the chicken while it bakes
  10. Remove from oven and transfer chicken to cutting board, let rest for 5 minutes.
  11. Serve with butter from pan and squeeze of lemon
