Preparation
Cut the chocolate into small pieces and melt in the top of a double boiler over simmering water.
While the chocolate is melting whip the cream and vanilla to stiff peaks. Be careful not over-whip the cream.
Allow the chocolate to cool slightly. Fold the chocolate carefully into the whipped cream. Serve immediately.
