Soft-Cheese Muffins

2 cups all-purpose flour
¼ cup confectioner's sugar
1 tbsp baking powder
1/2 tsp baking soda
1 ½ cups havarti cheese or tilsit cheese
1 whole large egg
1/4 cup butter or margarine, melted
1 cup sour cream or plain yogurt

Preparation

1. Position the rack in the center of the oven and preheat to 375 degrees F. Lightly grease or line with paper baking cups.

2. In a large bowl, blend together the flour, sugar, baking powder, baking soda, and cheese. In a medium bowl, beat the eggs until foamy. Beat in the butter/margarine and sour cream/yogurt. Combine the two mixtures, blending until the dry ingredients are just moistened. Do not over mix.

3. Spoon the batter into the prepared muffin cups, filling each cup about three-quarters full. Sprinkle the tops of the muffins lightly with cheese. Bake for 15 to 20 minutes, or until the tops of the muffins are golden and a cake tester or wooden toothpick inserted into the center of a muffin comes out clean. Cool in the pan on a wire rack for 5 to 7 minutes. Serve warm, or invert onto the rack to cool completely.
